The primary difference between spring and autumn star anise lies in their maturity at harvest, which significantly impacts their quality and concentration of essential oils. Autumn star anise is generally considered superior and is the most common commercial grade, featuring a darker reddish-brown color, thicker shell, and a much more potent, robust aroma and flavor. Conversely, the spring harvest yields pods that are typically lighter in color and have a thinner shell, often resulting in a slightly milder flavor and lower essential oil content. Due to its higher concentration of anethole, the autumn variety is typically preferred for industrial extraction and intense culinary applications.
